This paper aims ware to review the ageing effect on various meats to its quality. The method used study of literature that supports to the topic. Based on a literature that was studied it was known that the ageing could affect to the properties of meat produced from cattle slaughtered at various seasons, to uniform a quality of meat that produced from meat derived from a different breed and sex, to overcome the hardened problem of meat derived from tropical cattle, ageing may affect to the water holding capacity, tenderness, juiciness, flavor, and color of meat.
