Asam fitat banyak terdapat dalam biji-bijian. Senyawa ini dapat mengikat kuat Zn. Penelitian ini mempelajari sintesis Zn-fitat dan degradasinya di dalam cairan rumen secara in vitro. Asam fitat diekstraksi dari pollard menggunakan larutan asam cuka 1% dengan rasio 1:3 kg/L. Ekstrak asam fitat direaksikan dengan larutan ZnCl2 pada perbandingan molaritas 1:2. Karakterisitik Zn-fitat ditentukan dengan mengukur bahan kering dan kadar mineral endapan. Produk Zn-fitat diinkubasikan dan diukur degradasinya dalam sistem rumen in vitro. Hasil penelitian menunjukkan bahwa pembentukan kompleks Zn-fitat dari campuran ekstrak pollard dengan ZnCl2 (2726 mg/L Zn) menghasilkan endapan sebanyak 10,7 mg/L yang mengandung 814,5 mg/L Zn atau 29,87% dari Zn yang direaksikan. Selain itu juga turut mengendapkan Mg dan Na sebesar 65,06 dan 13,48 mg/L. Kompleks Zn-fitat didegradasi lambat dalam cairan rumen dan secara perlahan-lahan degradasinya meningkat yang dimulai pada jam ke-8.
Phytic acid was high in cereals grain and had high affinity to bound Zn. The present experiments aimed to synthesize Zn-phytate and its degradation in rumen fluid in vitro. Phytic acid was extracted from pollard using acetic acids solution at concentration 1%. Solution of acetic acid at concentration of 1% was used to produce phytic acid from pollard at ratio of 1:3 kg/L. Phytic acid solution was mixed with ZnCl2 solution at a molarity ratio of 1:2. Zn-phytate characteristics were identify with dry matter and minerals in the sediment. In vitro studies were conducted to evaluate the degradation of Zn-phytate. Result indicated that formation of Zn-phytate in the pollard extract mixed with ZnCl2 solution (2726 mg/L Zn) at molarities ratio of 1:2 was 10,7 mg/L. Total Zn bound the phytic acid was 814,5 mg/L or 29,87% from Zn mixed. Magnesium and Na precipitated in the sediment were 65.06 and 13.48 mg/L. Zn-phytate complex was degraded slowly in rumen fluid. Zn-phytate degradation was likely commenced after 8 h of incubation.
