Proximate Analysis Of Shark’s Cartilages

The proximate analysis in shark cartilage’s sample has been carried out using termogravimetric methods (water content), dry ashing methods (ash content), Kjeldahl methods (protein content), soxhletation methods (fat content), carbohydrate by difference (carbohydrate content). The result showed that the water content in shark’s cartilages sample was 4,86 %, ash total content was 53,99 %, protein content was 31,11 %, fat content was 1,56 % and carbohydrate content was 36,48% . The proximate analysis in shark’s cartilages sample by those methods were accurately with standard deviation and coefficient variation less than 2 %.
